Tapioca Pearls : Water — 1 : 8
• Ingredients
Tapioca Pearl 1000 g
Water 8 L
Brown Sugar 400 g
• Preparation Method
  1. Bring water to a full boil
  2. Add tapioca pearls and stir to prevent sticking
  3. Wait until water returns to a boil
  4. Reduce heat to medium
  5. Cook for 13 minutes
  6. Add 100 g brown sugar and cook for another 2 minutes
  7. Turn off heat and cover with lid
  8. Let it rest for 15 minutes
  9. Strain and rinse with room-temperature water
  10. Mix with the remaining 300 g brown sugar
