Mochi Boba : Water — 1 : 8
• Ingredients
Mochi Boba 1000 g
Water 8 L
Brown Sugar for Cooking 100 g
Brown Sugar for Soaking 300 g
• Preparation Method
  1. Bring water to a full boil
  2. Add boba and stir immediately to prevent sticking
  3. Wait until the water returns to a full boil
  4. Cook on medium-high heat for 13 minutes, stir occasionally
  5. Add 100 g brown sugar and cook for another 2 minutes
  6. Turn off heat
  7. Cover the pot with a lid
  8. Let boba rest for 15 minutes
  9. Strain and rinse with room temperature water
  10. Mix with 300 g brown sugar before serving

Freshly cooked mochi boba delivers the best chewy texture and is ideal for Macha, milk tea, smoothie. For optimal quality in busy boba shops, prepare new batches every 4-6 hours.
