Boba : Water — 1 : 8
• Ingredients
Boba Pearls 1000 g
Water 8 L
Brown Sugar for Cooking 100 g
Brown Sugar for Serving 300 g
• Preparation Method
  1. Bring 8 L of water to a full boil.
  2. Add 1000 g of boba pearls and stir gently to prevent sticking.
  3. Wait until the water comes back to a boil, then reduce to medium heat.
  4. Set a timer and cook for 13 minutes.
  5. Add 100 g brown sugar and cook for another 2 minutes.
  6. Turn off the stove, cover the pot with a lid, and let the boba rest for 15 minutes.
  7. Strain the boba and rinse with room-temperature water.
  8. Add the cooked boba into a warmer.
  9. Mix with 300 g brown sugar until the boba is evenly coated.
  10. Keep warm in the warmer and serve as needed.
  11. Serving Note
  12. For best texture, keep cooked boba warm in the warmer and serve fresh. Boba is best used within 4 hours for a soft and chewy texture.
